When I wanted peanut butter and a nutritious snack after school, I made this. Nutella®, more peanut butter, granola, fruit, oats, graham crackers, cookies, or cereal are just a few of the options for toppings. The options are limitless!

Ingredients: 1 serving (from the original recipe)
- peanut butter (two tablespoons)
- 14 cup Greek yogurt, plain
- 12 tsp stevia brown sugar mixture
- 1/8 tsp vanilla extract
- 1 tbsp chocolate chips (or more to taste)
Instructions

Step 1
Microwave peanut butter in a microwave-safe bowl for about 20 seconds, or until liquid and creamy.

Using a spoon, stir Greek yogurt into peanut butter until smooth, scraping off any peanut butter that has adhered to the spoon. Combine the stevia and vanilla essence in a mixing bowl. Chocolate chunks should be folded in.
Cook’s Notes:
Use up to 3 tablespoons of peanut butter for a richer peanut butter taste.
Instead of plain Greek yogurt, you can use vanilla Greek yogurt. If you do, leave out the vanilla extract.
If you don’t want to use the chocolate chips, the mousse can be used as a topping for something else.
